Dante—most often depicted wearing a dark or crimson robe and cap—is represented by the dark balsamic vinegar.

Dante Aceto Balsamico—made from cooked grape must blended with a touch of red wine vinegar and aged for a minimum of 12 years—has a thick, syrup-like consistency with nuanced aromas of dried figs, prunes and fresh cherries, and a bright, lively finish.

How to use it: Drizzle over grilled steak, seared duck breast or roasted quail. Or toss with summer-fresh strawberries and serve over lightly sweetened mascarpone cheese.

Dante's true love, Beatrice—immortal in her white gown—is represented by Acetaia Leonardi's white balsamic vinegar.

Beatrice Condimento Balsamico Bianco—made from trebbiano grape must blended with white wine vinegar—is aged for at least 8 years in oak barrels. This golden-hued condiment is blossoming with rich floral aromas and honeyed notes of dried apricots.

How to use it: This vibrant condiment pairs exquisitely with fruit. Drizzle over grilled apricots topped with a dollop of crème fraîche and torn basil leaves. Or use as a glaze and brush over a fresh fruit tart.
