Bronte Pistachios from Sicily-New

Bronte Pistachios are definitely not your average snacking pistachio. These vibrant green nuts, named after the Sicilian town by the same name,are known for their stunning color and fragrant fruity aroma. Since Sicily produces only 1% of the world's pistachios (whereas California produces about 24%), Brontes are extremely rare and almost impossible to find. Grown in the mineral-rich volcanic soils on the slopes of Mount Etna, just east of Bronte, they are so prized that their production is protected by the Italian government with a D.O.P distinction. Bronte pistachios have an incomparable sweetness, tender texture and a condensed nutty taste. They beg to be used in simple preparations letting their intense aroma and concentrated pistachio flavor shine (a whole bag can go a long way accenting both sweet and savory dishes).

Cooking Ideas Outside the Shell
You might have had these brightly-colored nuts in traditional Sicilian desserts such as torrone, cannoli or gelato. The sweet possibilities are endless from biscotti to studded olive oil cake, or chocolate bark embedded with pistachios and dried cherries. But these nuts stand out in savory preparations as well.

  • Add a Sicilian twist to a classic baked goat cheese salad: Gently press crushed pistachios onto a disk of fresh goat cheese and bake rounds for 6-8 minutes in a 400 degree oven. Place atop baby greens dressed simply with lemon juice and fruity extra virgin olive oil.
  • Give pesto a powerful pistachio punch: Unlike traditional Pesto Genovese, Sicilian Pesto is nut-based allowing the dazzling pistachios to take center stage. Toss with pasta, spoon over grilled vegetables or spread on crostini and top with shaving of fresh pecorino.
  • Create a nutty condiment for summer dishes: Make a Pistachio Gremolata. Mix 1/4 cup chopped toasted pistachios with 1/4 cup chopped flat leaf parsley and the zest of a lemon. Use this vibrant mixture to enliven grilled meats and fish or sprinkle over sliced heirloom tomatoes drizzled with Olio Verde Extra Virgin Olive Oil.
