A Refreshing Japanese Alternative to BBQ Sauce

15 August 2012

Japanese Ponzu Sauce from Yakami Orchard

Sometimes grilling sauces can be heavy and overpowering in flavor, especially for vegetables and seafood. Yakami Orchard Japanese Ponzu is a light and crisp dipping sauce that doubles as a dressing or marinade. Ponzu is a blend of essential Japanese ingredients: yuzu (a uniquely fragrant Japanese citrus), mirin (sweet sake), kombu (seaweed) and bonito (dried tuna). A splash of rice wine vinegar brightens the umami-packed savory depth of this sauce.

Ponzu is the quintessential Japanese dipping sauce for everything from steamed crab to grilled steak. Let its refreshing flavor compliment your summertime grilling menu, particularly with shrimp, scallops or swordfish. Simply serve alongside grilled meats, seafood or vegetables in individual dipping dishes, with a dash of soy sauce and a pinch of ground ginger. Ponzu also makes a wonderful marinade for salmon or halibut. Marinate filets for an hour in ponzu tossed with julienned fresh ginger. While the marinated fish is cooking, reduce the marinade in a sauce pan and pour it over fish just before serving.

Ponzu also makes a superb dressing for summertime salads. Surprise your guests with a refreshing vegetable slaw of carrots and cabbage dressed in ponzu. We love a salad of chilled soba noodles, julienned cucumbers and pickled ginger drizzled with ponzu over the top (add a dollop of wasabi for additional spicy zing).

Pure Yuzu Juice from Yakami Orchard

Summertime is the ideal season for the refreshingly sweet, fragrant and tart flavor of yuzu. Yakami Orchard Pure Yuzu Juice is just that - 100% pure juice. Simply substitute yuzu for lemon juice in any of your daily menus and discover for yourself the excitement that this nobby little Japanese citrus is creating. Make a fresh mango, crab and arugula salad dressed with yuzu juice and a fruity extra virgin olive oil dressing (see recipe below). Marinate squid in yuzu juice and a dash of soy sauce and grill with whole scallions for a light grilled dish. Sear scallops or red snapper in butter and yuzu juice, and add chopped cherry tomatoes, red onion and parsley to the pan sauce when reducing for a delightful yuzu tomato remoulade. Yuzu juice is also the perfect ingredient for incredibly refreshing cocktails and non-alcoholic drinks.
