Cook Like a Peruvian

costa peruana amarillo paste 500x500Aji Amarillo, arguably the most common pepper used in Peruvian cuisine, packs a spicy punch of heat. Some compare their flavor to scotch bonnet peppers, but with a bright fruity acidity and milder heat.

Traditional Uses: Cook up some Causa, a classic potato dish layered with hard boiled eggs, mayo and other various fillings such as tuna, chicken, olives, tomatoes or avocado.

Spice it Up: Add a zippy kick to potato salad. Create a quick dressing with mayonnaise, a tablespoon of aji amarillo paste and a squeeze of lime juice.

costa peruana panca paste 500x500Aji Panca is also one of the most commonly used native Peruvian peppers after its spicier cousin Aji Amarillo. Aji Panca peppers are known for their mild heat, deep burgundy color, subtle smokiness and rich, berry-like flavor.

Traditional Uses: Grill some Antichuchos de Pollo. These savory chicken skewers are sure to brighten up any BBQ.

Spice it Up: Make a zesty compound butter - mix a spoonful of aji panca paste into softened butter. Serve atop grilled steak or slather over corn on the cob.
