rancho gordo corona beans 400x522The Queen Bean

Sound the trumpets! NEW Royal Corona Beans from Rancho Gordo (the Spanish word corona translates to "crown") should hold reign in every pantry.

These large white runner beans—from Rancho Gordo, champions of preserving heirloom bean varietals in California, the Americas and abroad—are a cross between Greek and Spanish gigante beans and traditional Italian coronas.

Royal Corona Beans cook up to be about twice the size of a classic lima bean, with a lusciously creamy yet meaty texture. Make a big batch of these heirloom beans and use them all-week-long. Here's how we give these corona beans the royal treatment.

The Royal Treatment

5 Ways to Hail the Royal Corona Bean
  1. Crispy Corona Beans with Greens & Dukkah: Crisp cooked corona beans in a hot pan with extra virgin olive oil, add a couple handfuls of your favorite greens—like kale, Swiss chard or spinach—and continue to cook until the greens are wilted. Garnish with a drizzle of extra virgin olive oil and a generous sprinkling of dukkah.
  2. Lemony Corona Beans: Make an easy side for grilled meats, fish and seafood—toss cooked beans with Lemon Agrumato Oil, lemon juice, plenty of chopped parsley and season with salt & pepper.
  3. Corona Beans con Colorado: Steve Sando—heirloom bean aficionado and founder of Rancho Gordo—loves using Royal Corona Beans as a meat substitute simmered in a spicy red chile sauce.
  4. Spanish Tuna & White Bean Salad: Dress beans and your favorite salad greens with a simple dressing of Spanish extra virgin olive oil and a splash of Sweet Sherry Vinegar. Top the salad with flaked Ortiz Bonito del Norte Tuna, sliced hard-boiled eggs and halved cherry tomatoes.
  5. Corona Beans with Basque Chimichurri: Toss cooked corona beans with Piment d’Espelette-studded Basque Chimichurri and serve on a bed of lightly dressed greens.
