This buzzworthy cocktail is sweetened with honey simple syrup, a.k.a. "runny honey," which goes beautifully with fragrant lemon and the aromatic botanicals in gin. Use leftover runny honey to sweeten iced tea and coffee.
To make the runny honey: Heat the honey and water in a small saucepan over medium heat, swirling the pan occasionally, until the honey has fully dissolved. Remove the pan from the heat and let the syrup come to room temperrature before using. Store any extra in an airtight container in the refrigerator for up to 3 weeks.
To compose the cocktail: Place the gin, runny honey and lemon juice in a cocktail shaker filled with ice. Shake well for 20 seconds and strain into a chilled martini glass. Garnish with a twist of lemon.
