Lima Bean Skordalia

This is a much-loved Pasta Shop classic. Fresh limas would be great aren't necessary.

Ingredients

  • 1 pound (frozen) lima beans
  • 1 tablespoon chopped garlic
  • 5 tablespoons fresh lemon juice
  • 3/4 cup extra virgin olive oil, Kitchen Line would be great, or McEvoy Ranch
  • salt & pepper

Instructions

Cook the lima beans in boiling water for 30-45 seconds, just to refresh them. Drain and cool. Place the limas in the bowl of a food processor with the garlic and lemon juice. With motor running, slowly drizzle in the olive oil. Process until smooth. Season to taste with salt & pepper. Serve with crostini, crudités or breadsticks.
