Made by the dynamic team of Mario Pojer and Fiorentino Sandri, these Italian wine vinegars highlight local Dolomiti grape varietals.

The duo takes just as much care making their vinegar as they do their wine—from the slow-percolating process to aging in oak barrels—resulting in smooth, nuanced vinegars with a balanced acidity.

Red Wine Vinegar from Pojer e Sandri

Pojer e Sandri's Red Wine Vinegar—made with local Negrara Trentina, Groppello, Lagrein, Merlot, Cabernet Sauvignon and Pinot Noir grapes—is robust and tangy with notes of late-harvest raisins, dried apples and a subtle woodsy finish.

How to use: Red wine vinegar is the workhorse of our pantry—whisk in salad dressings, add a splash to braised greens or use in vibrant, herb-based sauces like our recipe for Carrot Top Chimichurri.


 

White Wine Vinegar from Pojer e Sandri

Their white wine vinegar—crafted from a blend of Dolomiti varietals such as Sauvignon Blanc, Riesling, Müller Thurgau, Traminer and Kerner—is more delicate with aromatic floral notes of elderflower blossoms, acacia and citrus zest.

How to use: The soft floral notes in this vinegar pair beautifully with fish and seafood—drizzle over grilled shrimp, add to a pan sauce for pan-seared fish or use in a mignonette sauce for oysters.
