Spicy Anchovies from Italy- New
This summer, Italian anchovies take the heat with a powerful dose of locally-made hot pepper paste from Salerno. Whole salt-cured anchovies, caught off the Amalfi Coast, are marinated with a smoky chili paste of mashed peperoncino and olive oil. Upon first taste, the round heat from the peppers fills your mouth mellowing the sharp brininess of the anchovy. As the warmth of the paste fades, the sweet meatiness of the fish shines through, lingering on the tongue.
These fiery, yet well-balanced anchovies make a wonderful addition to pasta sauces, soups and stews. Create a spicy, umami base for Sorrento-Style Fish Stew, a classic fisherman's stew popular in Campania packed with cod, squid and a variety of shellfish. Add a touch of spice to classic anchovy-centric dishes, such as Caesar Salad and Puttanesca Sauce. Or enjoy these zesty anchovies in their purest form: simply perch de-boned fillets atop a crusty piece of bread slathered with unsalted butter.
The IASA Story:
Based in Southern Italy, Ittica Alimentare Salerno(IASA), run by the di Mauro family has been in the fishing business for generations (you may know them for their Colatura, or anchovy syrup). Salvatore di Mauro, one of the three siblings managing the company, tells us that IASA is one of the only companies left in Italy who cure and pack their fish by hand.
The anchovies are processed immediately after being fished from the warm waters of the Mediterranean Sea. They are gutted, cleaned and placed in layers with sea salt in large drums. After 12 months of curing, the silver-skinned fish are removed from the sea salt, rinsed and briefly dried on crisp linen cloths. These beauties are then re-packed in fresh sea salt, in addition to being turned into a variety of extraordinary anchovy products such as fillets packed in olive oil, anchovy paste and spicy anchovies.

Fresh off the plane, Manuka Honey and Pohutukawa Honey are here. These honeys produced by husband and wife team, Neil and Audrey Stuckey, are some of New Zealand's finest. The Manuka is a full-bodied honey that is said to have antibacterial and sedative properties. While the Pohutukawa is a milder honey, dense and creamy with a sweet, rounded minerality and a unique savory tang in the finish.
