Colline di Santa Cruz is the epitome of a well-balanced oil—rich and buttery with notes of ripe olives and avocado with a gentle tickle of black pepper in the finish. A medium to robust oil.

Pour it on: Make a vibrant topping for fish and seafood—mix chopped citrus segments (blood oranges or cara cara oranges are lovely here) with a generous amount of olive oil, chopped parsley and a touch of gray sea salt.
