9 Ways to Use Truffles for the Holidays

Every year, from mid-November into early March, a variety of pigs and truffle-sniffing canines throughout Europe get busy rooting up prized truffles, many of which will be headed to Market Hall Foods. These elusive tubers—dear in price due to limited growth areas and harvesting challenges—possess some of the most seductive, enigmatic and coveted flavors on earth.

Deviled eggs are festive, fun, nutritious and delicious—and never more so than when they're heaped with truffles. Set out a tray of Truffled Deviled Eggs next to a bottle of bubbly and watch them disappear.
2. Truffled popcorn for the win.
Toss buttered popcorn with a drizzle of black truffle oil and season with KL Keller Black Truffle Salt (our pairing: Turkey Day football).
3. Creamy mushroom & truffle dip.
Count 'em: 5 ingredients. In a large skillet, melt a tablespoon of butter and sauté one pound of chopped mushrooms and a thinly sliced shallot until caramelized. Transfer the cooked mushroom and shallot mixture to the bowl of a food processor, add a half pint of our housemade Truffle Cream Sauce (available in-store) and pulse to combine. Scoop the dip into a shallow baking dish, top with buttered panko breadcrumbs and broil on low until the dip is bubbling and the breadcrumbs are golden brown. Serve with our housemade crostini (in-store).
4. Oh la la! Truffled gougères.
Substitute our housemade truffle butter in David Lebovitz's recipe for French gougères (bonus points if you add a little extra chopped fresh Fall Black Truffle).
5. Make-ahead truffled sandwich for a crowd.
The morning of your big event, slice a baguette in half lengthwise, slather the bottom half with Black Truffle Mustard from KL Keller, thin slices of French ham, sliced Antique Gruyère cheese and top with the other half of the baguette. When it's time to party, pop the sandwich in a 375°F oven until it's toasty and the cheese is melted. Cut into individual portions and serve. Applause!
6. Chicken Liver Crostini with Truffle Balsamic.
Top crostini with our housemade chicken liver mousse pâté, drizzle with 12-Year Truffle Balsamic from Acetaia Leonardi and garnish with thinly shaved fresh black truffle.
7. Truffled up arancini.
Roll triple-truffled risotto—bolstered with black truffle butter, chopped fresh Fall Black Truffles and sharp truffled pecorino cheese—into balls, bread and fry. Party tip: Make ahead and reheat in the oven as your guests are arriving.
8. Bresaola, arugula and truffle pecorino cones.
Twist thinly sliced cured bresaola into cones and filled with a mixture of arugula and shaved Pecorino Stagionato Tartufo dressed with a touch of black truffle oil and a spritz of lemon juice.
