The ABCs of Tomato Sauce

Rustichella d'Abruzzo sauces have long been our favorite Italian jarred tomato sauces. And, as avid pasta lovers, we're here to teach you the ABCs of real, authentic tomato sauce:

Lesson A: Great sauce starts with great ingredients.
All five of Rustichella d'Abruzzo's sauces start out with the very best ingredients - sun-ripened Italian tomatoes, extra virgin olive oil from Abruzzo and a touch of Sicilian sea salt. Their sauces highlight simplicity with minimal ingredients - no preservatives or fillers.
Lesson B: Eat pasta with sauce, not sauce with pasta.

Lesson C: Pair your sauce with the perfect cut of pasta.
Some sauces work better with certain pasta cuts. Smooth sauces, like Arrabbiata, work well with long cuts of pasta like Spaghetti, clinging to the rough surface of the pasta. While the texture of chunkier sauces, like Sugo alla Norma, are better suited to the ridges, nooks and crannies of shorter cuts of pasta like Penne Rigate. Rustichella d'Abruzzo's Tomato Sauce with Basil, our best selling tomato sauce, is our favorite all-purpose sauce. Sicilian sea salt offsets the sweetness of ripe tomatoes, onions and carrots, while fresh basil adds a vibrant pop of brightness.

How to use: For a spaghetti dinner on the fly, toss warmed tomato sauce with 90 Second 'Rapida' Spaghetti (Yup, you read right, pasta that cooks in 90 seconds flat).

216Organic Tomato Sauce with Basil

Rustichella d'Abruzzo's Organic Tomato Sauce embodies simplicity and freshness. It's made with only 6 ingredients - organic tomatoes, basil, onions, carrots, extra virgin olive oil and a whisper of salt. Plus, there's no sugar added.

How to Use: Good on just about anything - toss with your favorite cut of Organic Pasta from Rustichella d'Abruzzo, use as a base for dishes like Chicken Cacciatore or use as a sauce for Pizza Margherita.

214Arrabbiata Tomato Sauce

Arrabbiata, meaning “angry” in Italian, is a spicy tomato sauce that gets its fiery temper from crushed red chili peppers balanced by sweet onions, garlic and rich extra virgin olive oil.

How to Use: This Southern Italian sauce is typically enjoyed with longer pasta cuts like Spaghetti and Bucatini. For an extra dose of heat, add a spoonful of Hot Peppers in Olive Oil.

215Olive Tomato Sauce

Rustichella d'Abruzzo's Olive Tomato Sauce is punctuated by pieces of Italian black olives and sweet sautéed onions. The olives lend an interesting texture and a delicate brininess to the sauce while a generous amount of extra virgin olive oil provides velvety richness.

How to Use: This sauce is traditionally served with shorter cuts of pasta - try it with Torchio, Fusilli or Casareccia.

Sugo alla Norma, the newest addition to the Rustichella d'Abruzzo sauce lineup, is said to be named after the Italian opera Norma by Vincenzo Bellini. This rich tomato sauce sings with succulent pieces of grilled eggplant, savory Ricotta Salata cheese and basil.

How to use: Make Penne alla Norma, the signature dish of Catania, Sicily - simply warm Sugo alla Norma, toss with penne pasta and top with grated Ricotta Salata or toasted breadcrumbs.
