From Alaska, With Love

09 June 2016

dear north smoked salmonNEW Wild Smoked Sockeye Salmon from DearNorth—a company owned by Alaska natives with roots dating back 10,000 years—is truly a love letter to the region.

Their smoked sockeye salmon—a staple in the Alaskan diet and and a symbol of kinship and sharing—starts with wild, sustainably-caught salmon fished from the pristine ice-cold waters of Glacier Bay. The salmon is filleted, hot-smoked over alder wood, brined in a sweet and savory fireweed nectar—made with locally-grown fireweed blossoms, water, sea salt, brown sugar and lemon zest—and then hand-packed into jars.

The finished fish is a true taste of Alaska—deliciously meaty, yet delicate with subtle notes of smoke and the sea. It is stunning straight out of the jar on crackers or flaked over a simple salad, but we always keep a couple jars on hand for quick and healthy meals in minutes. Read on for our favorite ways to take this Alaskan favorite from the jar to table.
